Creamy Broccoli One Pot Pasta

I popped this picture up on my instagram last night, and it was so easy to make that I thought I’d do a little recipe blogpost! There’s almost no washing up either, just one saucepan, and however many plates and knives and forks you’ve used. Woop!


Creamy Broccoli One Pot Pasta
(very slightly adapted from this recipe at A Beautiful Mess)
This’ll feed two very hungry people, or three regularly hungry people 😉

You’ll need…
♥ 250g dry fettucine
♥ 2/3 chopped garlic cloves
♥ 1 tbsp butter
♥ 2 tsp olive oil
♥ 500ml stock
♥ 300ml milk
♥ 200g broccoli florets
♥ 1 handful grated parmesan

♥ Heat the butter and olive oil in a large saucepan, on a high heat.
♥ Sauté the chopped garlic for a couple of minutes, then add the stock, milk, pasta, and broccoli.
♥ Once the liquid is boiling, give it a gentle stir, turn the heat down to a simmer, and pop a lid on.
♥ After 10 minutes, take the lid off, and give another stir. Most of the liquid should have been absorbed, and it should be thickening up.
♥ It’ll only need another 8 minutes or so, so stir in the parmesan, and just keep an eye on it. It might need stirring occasionally, just so the pasta doesn’t stick.
♥ Once almost all of the liquid is gone, have a little taste test, and then serve it up!

Easy peasy, and done in twenty minutes. *thumbs up emoji*
