Well, this week’s Coca-cola Chicken was a bit of an experiment in slow cooking, but it turned out quite nice, so I thought I’d share the recipe!
Adapted from Southern Food’s Crockpot Cola Chicken.
Chicken breasts/thighs (1 per person)
1 tin chopped tomatoes
1 can coca-cola
Rice/pasta/potatoes to serve.
Chop up the carrot and slice the onion, then put the chicken in the bottom of the slow cooker with a bit of salt and pepper. Put the carrot and onion on top, then pour over the tomatoes and the coke. Put the lid on and switch the slow cooker to ‘low’ for 6-8 hours. That’s it!!
The original recipe says to use tomato ketchup intstead of real tomatoes, but a whole jar of ketchup seemed an awful lot to me, so we changed it. Having cooked it, I think that the reason for the ketchup is that its stickier than the chopped tomatoes, so I might go half and half next time!
